I have been traveling everywhere, sharing my passion for great food and d&#8217;lish cocktails (all the while earning lots of flyer miles!). Here\u2019s a quick recap of what my team and I have been up to!<\/p>\n<p style=\"text-align: center;\">&#8212;&#8212;&#8211;<\/p>\n<h2>Tasty Travels<\/h2>\n<p><strong>Congratulations to the Fairmont Hotels!<\/strong><br \/>\nThe new year started out with a trip to New Orleans, where I attended the annual <a href=\"http:\/\/www.cheersconference.com\/\">Cheers Beverage Conference<\/a>. Living up to its name, it was quite the libatious celebration all around \u2013 from tastings and seminars, to celebrity mixologist parties. But most exciting was the <a href=\"http:\/\/www.fairmont.com\/\">Fairmont Hotels &amp; Resorts<\/a> winning the Cheers 2012 Best Chain Hotel Beverage Program for the FAME (Fairmont Artistic Mixology Experience) Program that we manage and helped create \u2013 from individual hotel trainings to building a master recipe manual and individual bar culture, as well as producing a nine-part online training series. We are thrilled to continue to keep FAME fresh! Congrats Fairmont!!<\/p>\n<p><strong>Dobr\u00fd De\u0148! (It Means \u201cGood Day\u201d in Ukrainian!)<\/strong><br \/>\nSpeaking of Fairmont\u2026 my next stop was Kyiv, Ukraine to train the team there on all things spirited! Senior Liquid Kitchen<sup>\u2122<\/sup> Mixologist <a href=\"..\/..\/bios#04\">Keith Waldbauer<\/a> and I landed in <strong>snowy and COLD<\/strong> Kyiv (or Kiev and pronounced kEEv) where it was straight to work.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7135\/7004258937_9d5efbd135.jpg\" alt=\"keith_and_drinks\" width=\"202\" height=\"280\" \/><br \/>\n<strong>Keith testing Liquid Kitchen Fairmont cocktails!<\/strong><\/p>\n<p>We trained the new staff for all the new bars and restaurants, and created lots of new cocktail creations using local products. We made birch syrup out of birch juice, which was amazing in an Old-Fashioned cocktail. And can I say how much I\u2019m in love with <a href=\"http:\/\/intl.monin.mobi\/premium-syrup\/monin-tarragon-syrup\">Monin&#8217;s Tarragon syrup<\/a>? (Don&#8217;t get too excited, it&#8217;s only available in Europe for now.) It\u2019s d&#8217;lish in a non-alcoholic drink I made with clementines and fresh sparkling lemon soda!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7099\/7004259313_6b43d0f0e3.jpg\" alt=\"herbal_liqueur\" width=\"331\" height=\"179\" \/><strong><br \/>\nOur beloved <a href=\"http:\/\/www.amazon.com\/Chartreuse-Green-Liqueur-750ml-750\/dp\/B005ZV9VKE\/ref=sr_1_1?ie=UTF8&amp;qid=1332286123&amp;sr=8-1\">Green Chartreuse<\/a> was not available, so I made my own herbal liquor \u2013 it turned out delicious! Those are little bottles of 97% grain alcohol, and yes, you can ignite it!<\/strong><\/p>\n<p>Ingredients were sometimes hard to get, but you make do with what you have. I pulled out my chef bag of tricks here and there, and we ended up with some pretty exciting cocktails! Drinks were shaken up with our house-made Black Tea and Pomegranate Elixer, house-made herbal liquor and grapefruit spice bitters.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7063\/6858143900_36024593d0.jpg\" alt=\"grated_salt\" width=\"329\" height=\"228\" \/><strong><br \/>\nIngredients were sometimes challenging \u2013 yes, I\u2019m grating my own salt!<\/strong><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm7.staticflickr.com\/6051\/7004258675_46fe199723.jpg\" alt=\"kathy_and_crew\" width=\"329\" height=\"247\" \/><br \/>\n<strong>The Fairmont Kyiv bar staff taking a photo break \u2013 after learning how to make house-made bitters.<\/strong><\/p>\n<p>In between work sessions, we did have some time to check out the scenery, shops and of course bars! Yes, the crew took us out in local style and tried to out drink us with shots of <a href=\"https:\/\/www.wineanthology.com\/p-2821-nemiroff-honey-pepper-vodka.aspx\">Honey Pepper Vodka<\/a>, chased with local unpasteurized beer \u2013 \u2018til the wee hours of the morning \u2013 but we held our own!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7084\/7004258997_622926e726_n.jpg\" alt=\"honey_pepper_vodka\" width=\"163\" height=\"119\" \/><img loading=\"lazy\" src=\"http:\/\/farm7.staticflickr.com\/6227\/7004259077_8fd6c6a131.jpg\" alt=\"beer\" width=\"177\" height=\"119\" \/><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7080\/7004259107_55efd28e96.jpg\" alt=\"crew\" width=\"178\" height=\"130\" \/><br \/>\n<strong>Honey Pepper Vodka + Local Beer = Fun with the Crew!<\/strong><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7204\/6858143216_2c1427e535.jpg\" alt=\"keith_church\" width=\"242\" height=\"181\" \/><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7214\/7004259387_8466ef0e49.jpg\" alt=\"church_2\" width=\"187\" height=\"182\" \/><br \/>\n<strong>On our excursion day, we visited some beautiful churches in Kyiv. I can still hear the bells ringing.<\/strong><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7111\/7004259407_e578ff236f_m.jpg\" alt=\"meat_face\" width=\"135\" height=\"235\" \/><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7039\/7004259441_e5edc65d69_m.jpg\" alt=\"cream_puff\" width=\"215\" height=\"235\" \/><br \/>\n<strong>They like faces on their foods too&#8230; LOL! Not sure why, but I got in a LOT of trouble at a store for taking this photo of sliced meat with funny faces! And the cream puffs were cute, too!<\/strong><\/p>\n<p>I found a little time to zip out to the store where it was fun to see all the local dried fish and pickled goodies. Of course, I was in heaven because I love all things pickled. The whole, pickled tomatoes were amazing!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7201\/7004259685_910c901feb_m.jpg\" alt=\"dried_fish\" width=\"219\" height=\"164\" \/><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7042\/6858144268_9dcd7ba157_m.jpg\" alt=\"pickled_everything\" width=\"217\" height=\"163\" \/><br \/>\n<strong>Local dried fish and pickled everything in Kyiv.<\/strong><\/p>\n<p>There sure were a lot (and I mean a LOT) of potatoes, pickles beets, and cabbage\u2026 so I was inspired to create the Kyiv Martini! It featured local vodka (which, by the way, is fantastic and has a very complex character) shaken with a slice of fresh beet and served in a glass lined with a piece of fresh, shaved cucumber, then garnished with my homemade beet-pickled onions. I\u2019d like one right now, please!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7208\/6858144436_ba39f0c4ab_m.jpg\" alt=\"kyiv_martini\" width=\"139\" height=\"190\" \/><br \/>\n<strong>My Kyiv Martini!<\/strong><\/p>\n<p>We also visited a really cool local restaurant called <a href=\"www.puzatahata.com.ua\">Puzata Hata<\/a>, where we had succulent dumplings and other local specialties, served to us at stations by cute Ukrainian ladies. You can eat your fill and drink local beer for under $10 a person!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm7.staticflickr.com\/6238\/7004259725_4e2989e39d_m.jpg\" alt=\"ukrainian_lady\" width=\"139\" height=\"232\" \/><\/p>\n<p>I have to say, Ukrainian people are some of the most welcoming and friendly people we have ever worked with. But after lots of hard work getting the crew ready to open all the Fairmont Bars, and eating my fill of borsch, potato, and cabbage dumplings, it was time to go home. I was really craving Asian food and some good ol\u2019 American home cooking. Luckily for me, as soon as I landed back in Seattle, my husband John had whipped up my favorite <strong><a href=\"..\/?p=438\">Slow Cooked Pot Roast with Half a Bottle of Wine and 20 Cloves of Garlic<\/a><\/strong> and fluffy mashed potatoes \u2013 thank you, honey! Yum! Then at work the next day, my Food Studios crew welcomed me back with pho (Vietnamese noodle soup). What a great way to come home! But stay tuned, as there might be a chance I&#8217;ll be going back this summer, when it\u2019s sure to be a bit warmer\u2026<\/p>\n<p><strong>Then it was off to Las Vegas\u2026<\/strong><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.speed-rack.com\/\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7212\/6858143252_7d349f1d6e_m.jpg\" alt=\"Speed_Rack_Logo\" width=\"237\" height=\"142\" \/><\/a><\/p>\n<p>\u2026to be one of the celebrity judges for the Speed Rack \u2013 Las Vegas event! Founded by two faboo <a href=\"http:\/\/www.lupec.org\/\">LUPEC<\/a> \u2013 NY members <a href=\"http:\/\/www.twitter.com\/LUPECNYC\">Lynnette Marrero<\/a> and <a href=\"http:\/\/www.twitter.com\/IvyMix\">Ivy Mix<\/a>, their event promotes female bartenders from coast-to-coast in a speedy and engaging round-robin style tournament, with proceeds going straight to fight breast cancer. It was fast-paced action and these ladies know how to shake up a storm right before the annual VIBE Conference!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7198\/7004260437_57e6748cb5_m.jpg\" alt=\"charlotte_tony_kathy\" width=\"240\" height=\"219\" \/><br \/>\n<strong>Charlotte Voisey, Tony Abou-Ganim and me getting ready to judge!<\/strong><\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7209\/7004261613_86ebe2c393_m.jpg\" alt=\"speed_rack_competitors\" width=\"234\" height=\"153\" \/><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7074\/6858146850_11b92ecafa_m.jpg\" alt=\"speed_rack_judges\" width=\"232\" height=\"153\" \/><br \/>\n<strong>Speed Rack competitors hard at work, and judges judging!<\/strong><\/p>\n<p>After Speed Rack, it was on to the <a href=\"www.vibeconference.com\">VIBE (Very Important Beverage Executives) Conference<\/a>, held in conjunction with the Nightclub and Bar Show. VIBE is an amazing event and I am thrilled to participate every year with <a href=\"http:\/\/www.monin.com\/\">Monin<\/a>. For the opening night I showcased my Spiced Islands Rum Punch crafted with Solerno blood orange liqueur, Sailor Jerry Rum, Monin <a href=\"http:\/\/www.amazon.com\/Monin-Almond-Syrup-750ml\/dp\/B000BH3K68\/ref=sr_1_1?ie=UTF8&amp;qid=1332292274&amp;sr=8-1\">Almond<\/a> and <a href=\"http:\/\/www.amazon.com\/Monin-Cinnamon-Syrup-750ml\/dp\/B000BH1NRG\/ref=sr_1_1?s=grocery&amp;ie=UTF8&amp;qid=1332292349&amp;sr=1-1\">Cinnamon<\/a> Syrups, fresh pineapple and lime juices, all topped with an Angostura Foam. And, of course, I love my bling, so it had a light dusting of 24K gold on top.<\/p>\n<p>The next day, associate Cameo McRoberts and I presented a seminar on non-alcoholic trends, where we discussed house-made sodas like cucumber, ginger, and lemongrass \u2013 as well as small indulgent treats like mini drinking caramels, and the love of carbonation and super fizz! Account Manager Heather Jones and new Liquid Kitchen Associate <a href=\"..\/..\/bios#05\">D\u00e4nny Ronen<\/a> shook up beverages like mad, for a packed house. It was all fun but I was ready to come home!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm7.staticflickr.com\/6031\/6858147530_78bdf9c836_m.jpg\" alt=\"heather_lizard\" width=\"240\" height=\"168\" \/><br \/>\n<strong>After a long trip to Vegas, it was time to leave\u2026before the lizards came! After I submitted my drink, I had a phone call with <a href=\"http:\/\/www.paramountcitrus.com\/\">Paramount Citrus<\/a> (the sponsor) which came about because they loved my drink. They probably thought I was nuts the way I was going on and on about my love of citrus. Those of you that have known me for years already know of my zesty lemon habit! From passing on birthday cake for a scrumptious lemon meringue pie to loving a pop of citrus zest in just about everything, I just adore all things citrus! With spring here, I thought I would share a delicious, bright-tasting side dish, <strong>Lemony Herbed Orzo<\/strong>. This sassy side is perfect as an accompaniment to grilled fish or roasted chicken, and paired with first-of-the-season fresh asparagus. Fresh lemon juice and zest add a zingy flavor pop.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7187\/6858147572_183bc87c48_m.jpg\" alt=\"zest_herb\" width=\"240\" height=\"157\" \/><\/p>\n<p><strong>Lemony Herbed Orzo<\/strong><\/p>\n<p>Makes 6 servings<\/p>\n<p>12 ounces dry orzo pasta (2 cups)<br \/>\n2 tablespoons butter, salted<br \/>\n1 tablespoon extra-virgin olive oil<br \/>\n1 tablespoon very finely minced shallots<br \/>\n1\/2 cup very coarsely chopped Italian parsley leaves<br \/>\n1\/4 cup thinly sliced chives<br \/>\n1 tablespoon chopped fresh basil or tarragon<br \/>\n3 tablespoons fresh-squeezed Paramount Citrus Lemon juice<br \/>\n1 tablespoon finely minced lemon zest (see my tip on how to make zest below*)<br \/>\n3\/4 teaspoon kosher salt<br \/>\nground black pepper<br \/>\n1\/3 cup finely grated parmesan cheese<\/p>\n<p>Bring 3 quarts of water to a boil in a large pot over medium-high heat. Stir in orzo and cook for approximately 6 \u2013 8 minutes, stirring often, until just al dente or per package instructions. Immediately drain well (do not rinse), then place orzo in a heat-proof bowl. Stir in butter, olive oil, shallots and herbs to coat well. Then stir in lemon juice, zest, seasonings and cheese. Serve immediately.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm7.staticflickr.com\/6044\/7004262963_a45a1d92fe_m.jpg\" alt=\"citrus_zest\" width=\"236\" height=\"154\" \/><\/p>\n<p>*Citrus Zest adds such a lovely flavor pop to any dish.<br \/>\nTo make lemon or other citrus zest: Zest is the outer peel of the fruit \u2013 with no white pith attached. You can remove the zest from the fruit with a fine zesting tool that makes long, very thin, pretty strands. Or you can peel off the zest with an ordinary potato peeler, being sure not to get any white pith, and then finely cut the zest in very, very thin long strips or mince it. You can also grate it off. There\u2019ll be activities all day, as well as craft booths to visit. You can also sample all the competing chowders entered in the Clam Chowder Cook-Off! It\u2019ll be a clam-tastic day \u2013 don\u2019t forget to get your clam licenses and gear ahead of time for the day\u2019s clam dig.
