No Problem!"},"content":{"rendered":"<p>With the Easter holiday fast approaching, it\u2019s time to load up on all the goodies to fill up those delightful baskets: <a href=\"http:\/\/www.marshmallowpeeps.com\/\">marshmallowy Peeps<\/a>\u00ae (which now comes in chocolate!), brightly colored jellybeans, the classic chocolate bunny and of course, colorful and decorated hard-boiled eggs.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7222\/6881391872_aff4ac205c.jpg\" alt=\"IMG03009-20110420-0940\" width=\"262\" height=\"196\" \/><strong><br \/>\nAren\u2019t they just egging you on?<\/strong><\/p>\n<p>Once all the goodies have been found (we hope!) and eaten, what do you do with all of the extra Easter bounty? Turn them into other d\u2019lish goodies!<\/p>\n<p>Have extra Peeps on hand? Well, they\u2019re perfect to melt into my<strong> Jelly-Bean Rice Crispy Tweeps<\/strong>. I love to rip their heads and use them for \u201cgarnish!\u201d<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7266\/6881391818_400c429b88.jpg\" alt=\"IMG03023-20110420-1045\" width=\"258\" height=\"193\" \/><br \/>\n<strong>Peep garnished Tweeps!<\/strong><\/p>\n<p>For the adults, grab a few of those chocolate bunnies and stir yourself up some <strong>Bunny\u2019Licious Chocolate Mocha Fondue<\/strong> using a splash of your favorite liqueur or shot of espresso. Serve with an assortment of fruits for dipping or some of those leftover Peeps.<\/p>\n<p>With all those extra eggs, how about an egg salad sandwiches? I like to add a little curry twist with my <strong>Springtime Curried Egg Salad Sandwiches<\/strong>. Then top it off with a tasty garnish of thinly sliced radish and cucumber \u2013 oh \u2013 so springy!<\/p>\n<p>Grab those extra Easter goodies and cook up some springtime fun! -Kathy<\/p>\n<p><strong>Peep &amp; Jelly-Bean Rice Crispy Tweeps<\/strong><br \/>\nMakes 30 treats<\/p>\n<p>3 Tbsp. butter<br \/>\n6\u00a0 packages yellow Peeps\u00ae\u00a0 &#8211; 30 peeps(you can use bunnies too for pink treats)<br \/>\n6 cups Rice Krispies\u00ae cereal<br \/>\n1 cup small jellybeans<\/p>\n<p>Pull 30 of the peeps heads off and set aside for garnish.<\/p>\n<p>In a <a href=\"http:\/\/www.amazon.com\/Cuisinart-719-16-Classic-Stainless-Saucepan\/dp\/B00008CM69\/ref=sr_1_1?ie=UTF8&#038;qid=1333058316&#038;sr=8-1\">large sauce pan<\/a> heat butter over low heat melt the butter until melted. Then add peeps and stir over low heat until melted. Then stir in rice crispies and jellybeans. Stir until cereal is well coated and jellybeans are distributed.<\/p>\n<p>Place mixture in a pan sprayed <a href=\"http:\/\/www.amazon.com\/Pyrex-Grip-Rite-8-Inch-Square-Baking\/dp\/B000MF8SL6\/ref=sr_1_2?ie=UTF8&#038;qid=1333058371&#038;sr=8-2\">8\u201dx8\u201d baking dish<\/a>. Cover with plastic wrap and press down to compact the crispy treats. Let set for at least 15 minutes before serving. To serve cut (5&#215;6) into 30 squares.<\/p>\n<p>Recipe by Kathy Casey Food Studios\u00ae<\/p>\n<p><strong>Bunny\u2019licious Chocolate Mocha Fondue <\/strong><br \/>\nMakes 4 servings<\/p>\n<p>6 ounces of left-over chocolate bunnies<br \/>\n1\/4 cup hot, strong brewed coffee<br \/>\n1 tablespoon liquor such as: Grand Marnier, ameretto or Frangelico\u00a0 liqueur (optional)<\/p>\n<p>For dipping: fresh fruit for dipping cut into chunks, such as: pineapple, strawberries, raspberries, apple wedges and oranges<\/p>\n<p>Other fun things for dipping are: pound cake chunks, holiday cookies, small chocolate chip cookies, other candy such as Peeps\u00ae \u2026..<\/p>\n<p>Break up or cut bunnies in small pieces (chocolate chip size)\u00a0 into a\u00a0 <a href=\"http:\/\/www.amazon.com\/Pyrex-Prepware-4-Quart-Rimmed-Mixing\/dp\/B0000CF41U\/ref=sr_1_2?s=home-garden&#038;ie=UTF8&#038;qid=1333058418&#038;sr=1-2\">glass<\/a> or <a href=\"http:\/\/www.amazon.com\/Signature-Housewares-Sorrento-120-Ounce-Mixing\/dp\/B000NTZJ86\/ref=sr_1_3?s=home-garden&#038;ie=UTF8&#038;qid=1333058463&#038;sr=1-3\">ceramic bowl<\/a> and pour hot coffee over them. Stir until chocolate is melted and mixture is smooth. If coffee is not hot enough to melt chocolate, then microwave\u00a0 for 10 seconds. Stir in liqueur if desired.<\/p>\n<p>Transfer mixture to a <a href=\"http:\/\/www.amazon.com\/Orka-Chocolate-Fondue-Set-Spots\/dp\/B001HCSG6A\/ref=sr_1_8?s=home-garden&#038;ie=UTF8&#038;qid=1333058506&#038;sr=1-8\">fondue pot<\/a> or pretty bowl and serve warm with long forks and lots of goodies for dipping.<\/p>\n<p>Recipe by Kathy Casey Food Studios\u00ae<\/p>\n<p><strong>Springtime Curried Egg Salad Sandwiches<\/strong><br \/>\nMakes 4 sandwiches<\/p>\n<p>6 hard-boiled eggs, peeled (see procedure)<br \/>\n2 Tbsp.very thinly sliced green onions<br \/>\n2 Tbsp.1\/8-inch-diced red onion<br \/>\n2 Tbsp. 1\/8-inch-diced celery<br \/>\n1\/2 tsp. curry powder<br \/>\n1\/2 cup mayonnaise (regular or light)<br \/>\n1\/2 \u2013 3\/4 tsp. Kosher salt<br \/>\nCoarse ground black pepper<\/p>\n<p>&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;<\/p>\n<p>8 slices high-quality tender bread such as brioche, Macrina potato bread, or egg bread<br \/>\nbutter lettuce leaves<br \/>\n16 very thin slices of peeled cucumber<br \/>\n4 red radishes, very, very thinly sliced<\/p>\n<p>Chop hard-boiled eggs to nice 1\/4-inch pieces, good for making the egg salad. In a bowl, mix chopped eggs with green onion, red onion, celery, and curry powder until evenly distributed. Mix in mayonnaise gently but thoroughly. Sprinkle with salt and pepper and mix thoroughly.<\/p>\n<p>Divide and spread the egg salad evenly among 4 slices of the bread.
