That first cup o&#8217; joe usually sets the tone for the rest of the day. And certainly the Pacific Northwest is known as <span style=\"text-decoration: underline;\">the<\/span> mecca for coffee drinkers and connoisseurs alike. Some think of us as coffee snobs\u2026maybe some of us are!<\/p>\n<p>After all, we do love our coffee, as much as we cherish our wines. Many independent coffee shops and cafes (frequented by the true coffee geeks) often hold <a href=\"http:\/\/www.seattleweekly.com\/slideshow\/cupping-seattles-new-way-to-fetishize-coffee-198466\/#1\">coffee \u201ccuppings\u201d<\/a> \u2013 picture a wine tasting, but for coffee!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" class=\"aligncenter\" src=\"http:\/\/farm9.staticflickr.com\/8112\/8517290692_077c146b55.jpg\" alt=\"Coffee beans\" width=\"270\" height=\"270\" \/><strong><br \/>\nI love the scent of fresh roasted coffee beans!<\/strong><br \/>\n(Photo courtesy of<a href=\"http:\/\/www.fontecoffee.com\/products\/\"> Fontee Coffee<\/a>)<\/p>\n<p>While dark chocolate and coffee are a match made in heaven, it pairs well with other flavors and other applications too. Add ground espresso to spice rubs for a flavor pop \u2013 excellent on steak or Alaskan salmon. Brewed coffee is great in baked beans, hearty stews and in d&#8217;lish in my <strong>Red Eye BBQ Sauce<\/strong> \u2013 try slathering over grilled chicken or ribs\u2026yum!<\/p>\n<p>On the sweeter side of things, try adding a little ground espresso to chocolate cupcake batter for a mocha-licious treat. For a zippy twist on zucchini cake, work in a little strong brewed coffee for a Northwest take on this perennial favorite.<\/p>\n<p>So put a little pick-me-up into your next dish. -Kathy<\/p>\n<p><strong>Red Eye Barbecue Sauce<\/strong><br \/>\nMakes 2 1\/4 cups<\/p>\n<p>1 tablespoon olive oil<br \/>\n1\/3 cup 1\/4-inch-chopped yellow onion<br \/>\n1\/2 teaspoon black pepper<br \/>\n1\/8 teaspoon celery seed<br \/>\n1\/4 teaspoon ground coriander<br \/>\n1\/4 teaspoon ground cumin<br \/>\n3\/4 teaspoon dry mustard<br \/>\n1 tablespoon minced garlic<br \/>\n1\/4 cup apple cider vinegar<br \/>\n1\/2 cup brewed coffee<br \/>\n5 tablespoons Worcestershire<br \/>\n3 tablespoons molasses<br \/>\n1\/3 cup packed dark brown sugar<br \/>\n1 cup ketchup<br \/>\n3\/4 teaspoon Tabasco<br \/>\n1 1\/2 teaspoons soy sauce<br \/>\n1\/8 teaspoon salt<\/p>\n<p>Heat the oil in a heavy saucepan over medium-high heat. Add the onion and sprinkle the black pepper and other dry spices on top. Stir and saut\u00e9 until the onions are glossy, about 3 minutes. Add the garlic and continue to saut\u00e9 about 1 more minute.<\/p>\n<p>When the onions are translucent, whisk in the remaining ingredients. Bring to a low boil, then reduce the heat and simmer 30 minutes, stirring frequently to prevent scorching.
