Why? Because it\u2019s the <a href=\"http:\/\/www.oceanshores.org\/clams.html\">Annual Razor Clam Festival<\/a>!<\/p>\n<p>Taking place in Ocean Shores (Washington), this fun event is going to be bigger than ever this year. They\u2019ve even added an extra day, and a new seafood cooking competition!<\/p>\n<p style=\"text-align: left;\">The festival runs from <strong>9am to 6pm<\/strong> on <strong>Saturday,<\/strong> <strong>March 23<\/strong> and <strong>9am to 4pm<\/strong> on <strong>Sunday,<\/strong> <strong>March 24 at the <a href=\"http:\/\/www.oceanshores.org\/\">Ocean Shores Convention Center<\/a><\/strong>.\u00a0 It is an event for the whole family; with live music, craft vendors, cooking competitions and demonstrations, gift giveaways, and so much more. Kids 12 and under get in free.\u00a0 Adults are $3.00 for each day or $5.00 for both days.\u00a0There will be lots of great food and chowder samples of course! \u00a0Don&#8217;t forget to stop at the various Bloody Mary and beer booths to wash down all that great chow.<\/p>\n<p style=\"text-align: center;\"><iframe loading=\"lazy\" width=\"420\" height=\"315\" src=\"http:\/\/www.youtube.com\/embed\/r6rQ30IC-6U\" frameborder=\"0\" allowfullscreen><\/iframe><br \/>\n<strong>The KCFS Crew doing the &#8220;Official&#8221; Razor Clam Dance!<\/strong><\/p>\n<p>But the true headliner event is the Clam Chowder Cook-Offs for both the pro and amateur chefs. Each year the festival has an array of contestants enter the Amateur Chowder Cook Off and compete for the best of the best on the Northwest Coast.\u00a0(My chef team will be judging again this year!) The First Place Winner gets bragging rights for a whole year and will be one of the judges for the Professional Clam Chowder Cook Off at the Festival in 2014. How cool is that!<\/p>\n<p>If you like to forage for your own clams, make sure to check out the <a href=\"http:\/\/wdfw.wa.gov\/\">Washington Department of Fish &amp; Wildlife<\/a> for more info on this year\u2019s dig\u2026and don\u2019t forget your clam license and essentials.<\/p>\n<p>Once you\u2019ve reached your razor clam limits, check out <a href=\"http:\/\/www.youtube.com\/watch?v=MWOg6ei77Q4\">this video<\/a> that my friend Scott Surdyke and I made on how to clean them properly. And for a super tasty way of cooking this bi-valve, try our recipe for our <strong>Clam-tastic Razor Clam Fritters<\/strong> with my Rock-the-World Tartar Sauce below.<\/p>\n<p>So pack up your clammin&#8217; gear (including you razor clam license) and head down to Ocean Shores &#8211; it\u2019s the <span style=\"text-decoration: underline;\">clamtastic<\/span> place to be! \u2013Kathy<\/p>\n<p><strong>Scott &amp; Kathy\u2019s CLAMTASTIC Razor Clam Fritters<\/strong><br \/>\nMakes 24 \u2013 26 fritters<\/p>\n<p>3 cups chopped\/diced razor clams<br \/>\n3 cups Krusteaz Buttermilk Pancake Mix with buttermilk<br \/>\n1\/2 cup cornmeal<br \/>\n1 1\/2 tsp baking powder<br \/>\n1\/4 tsp lemon pepper<br \/>\n1 Tbsp minced lemon zest<br \/>\n2 tsp sea salt or kosher salt<br \/>\nFresh-ground pepper to taste<br \/>\n1 Tbsp minced garlic<br \/>\n3\/4 cup clam nectar (or reserved clam juice)<br \/>\n1\/4 cup Northwest amber beer, flat<br \/>\n2 eggs, whisked<br \/>\n1\/2 cup minced celery<br \/>\n3\/4 cup fresh corn kernels<br \/>\n6 scallions\/green onions, thinly sliced<br \/>\n1\/2 cup chopped orange or red bell pepper (about 1\/2 pepper)<br \/>\n\u2014\u2014\u2014\u2014\u2014\u2014\u2014\u2014\u2014\u2014\u2014\u2014\u2014\u2014\u2014\u2014\u2014<br \/>\nCrisco shortening for frying<br \/>\nLemon wedges for garnish\/squeezing<br \/>\nKathy Casey\u2019s Ultimate Rock-the-World Tartar Sauce (recipe follows)<\/p>\n<p>Drain the clams and save any juice for use in recipe.<br \/>\nIn a large bowl combine the Krusteaz, corn meal, baking powder, lemon pepper, zest, salt and pepper. Stir in the garlic, clam nectar\/juice, beer and eggs to combine.<br \/>\nThen fold in the celery, corn, green onions, bell pepper and drained clams.<\/p>\n<p>Heat 2-inches of Crisco in a large cast iron skilled till hot \u2013 about 375 degrees. Scoop out fritters a few at time \u2013 I use a 1\/4 cup measure \u2013 they should be kind of spread out and not too thick. Fry on first side till golden and then flip over. Continue frying till golden and cooked through. Drain on paper towels. Cook fritters in batches being sure oil stays hot. Keep fritters warm in a 300 degree oven on a rack if needed \u2013 but they are best served right away \u2013 the fritter cook will just have to keep cooking! Serve with Rock the World Tartar Sauce and fresh lemons.<\/p>\n<p>Recipe by Scott Surdyke and Kathy Casey<\/p>\n<p><strong>Kathy\u2019s Rock-The-World Tartar Sauce<\/strong><br \/>\nMakes 2 cups<\/p>\n<p>1 1\/2 cups mayonnaise<br \/>\n1\/4 cup finely chopped dill pickle or dill pickle relish<br \/>\n2 Tbsps drained capers, chopped<br \/>\n1 green onion, very thinly sliced<br \/>\n1 1\/2 tsp Dijon mustard<br \/>\n1\/2 tsp Tabasco sauce<br \/>\n2 Tbsps chopped parsley<br \/>\n1\/4 tsp celery seed<br \/>\n2 Tbsps fresh lemon juice<br \/>\n1\/2 tsp granulated garlic<br \/>\n1\/2 tsp salt<br \/>\n1\/4 tsp black pepper<\/p>\n<p>In a medium  bowl, mix all the ingredients.<\/p>\n<p>Recipe adapted from <em><a href=\"http:\/\/www.amazon.com\/Kathy-Caseys-Northwest-Table-Washington\/dp\/0811854329\">Kathy Casey\u2019s Northwest Table<\/a><\/em>, Chronicle Books<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Every year I look forward to the last weekend in March.
