These delicious juicy little fruits are definitely worth the fight with the prickly bushes that they grow on &#8211; and your patience will be rewarded!<\/p>\n<p>Not only are <a href=\"http:\/\/en.wikipedia.org\/wiki\/Blackberry\">blackberries<\/a> delicious, but they\u2019re good for you! With one of the highest levels of antioxidants of any fruit &#8211; these berries are also a wonderful source of vitamins C and K as well as fiber.<\/p>\n<p>Truth be told, I think blackberries really are a taste of summer, which is why they\u2019re the perfect addition to a refreshing summer cocktail. Add them into a shaker tin with some fresh mint, lime juice, simple syrup and rum, and you have a wonderful (and easy to make) <strong>Blackberry <\/strong><a href=\"http:\/\/kathycasey.com\/blog\/?p=77\"><strong>Mojito<\/strong><\/a>!<\/p>\n<p>Gone blackberry picking and now have a big bowl in the fridge? Throw some in your pancake batter and start the morning off with some d\u2019lish <a href=\"http:\/\/kathycasey.com\/blog\/?p=4663\"><strong>Blackberry Pancakes topped with Citrusy Syrup<\/strong><\/a>.<\/p>\n<p style=\"text-align: center;\"><img src=\"http:\/\/farm3.staticflickr.com\/2889\/12504796294_1206cd8423_o.jpg\" alt=\"\" \/><br \/>\n<strong>Photo from\u00a0<a style=\"margin: 0px; padding: 0px; color: #4682b4; text-decoration: none;\" href=\"http:\/\/www.amazon.com\/Dishing-Kathy-Casey-Cocktails-Seattles\/dp\/1570613672\">Dishing with Kathy Casey<\/a>.<\/strong><\/p>\n<p>Or how about a summer salad tossed with <strong>Blackberry Honey Vinaigrette <\/strong>\u2013 a sprinkling of toasted hazelnuts and fresh goat cheese \u2013 a great start to any summer meal.<\/p>\n<p>Enjoy the last days of summer with a fresh bowl of blackberries! \u2013Kathy<\/p>\n<p><strong>Blackberry Honey Vinaigrette<\/strong><br \/>\nToss with summer garden greens, and fat blackberries. Scatter with toasted hazelnuts and a crumbling of blue cheese or chevre. Dressing recipe can easily be doubled.<\/p>\n<p>Makes about 1 generous cup of dressing.<\/p>\n<p>1\/2 cup fresh (or frozen) blackberries<br \/>\n1\/4 cup red wine vinegar<br \/>\n2 Tbsp <a href=\"http:\/\/www.kathycasey.com\/shop_honey.html\">Liquid Kitchen\u00ae No. 5130 honey<\/a> or local honey<br \/>\n2 tsp Dijon mustard<br \/>\n6 Tbsp olive oil<br \/>\nPinch cayenne pepper<br \/>\n1\/2 teaspoon kosher salt<\/p>\n<p>Combine all the vinaigrette ingredients in a blender or food processor and process until smooth. Refrigerate until needed.
