- Signature bar programs: training and set-up
The Liquid Kitchen was developed to accommodate an industry-wide need to offer a more exciting, professional, and unique signature bar and cocktail experience for the consumer as well as a cocktail-consulting program devised to account for each client's individual fiscal and creative needs.
Cocktails, bars, and lounges have seen an unprecedented resurgence in popularity around the world, a revival that we are confident is here to stay. Signature drinks, both alcoholic and non-alcoholic, are great revenue enhancers. Kathy Casey Food StudiosŪ - Liquid Kitchen has a full working bar, espresso machine, and beverage specialist available for drink development and testing.
A frontrunner in the bar chef movement, Kathy Casey has garnered international attention for innovative beverage programs. The philosophy is simple: A properly executed bar program, like a professional kitchen, works diligently to consistently bring the highest quality product and service experience to the consumer.
Ingredients must be fresh and product must be well chosen to provide maximum benefit to guests while optimizing profitability. To create, and recreate, the perfect cocktail experience, portions should be fair and exact. Drinks should have distinct “layers of flavors” tempting the palate as surely as a well-prepared appetizer or entrée would. Kathy's cocktail creations range from the playful and perky Cosmo Chi Chi, created for the Breast Cancer Foundation, to her Autumn Sidecar, which brings a classic back to the hip cocktail scene with a swish of Frangelico, Tuaca, brandy and citrus essences. Cheers magazine calls Kathy "an indefatigable creative spirit." She is a frequent speaker on cocktail and beverage trends.
Bartenders and mixologists must be properly trained in order to facilitate this outcome on a regular basis. Correct and extensive knowledge of recipes, techniques, spirits and modifiers is required to ensure your staff's ability to move product and generate revenue. The bar itself, similar to a well-assembled kitchen line, should be organized to maximize both service and profitability. A strong beverage program should be constantly evolving, stressing continued innovation and seasonality to best take advantage of the market.
Most recently, for Fairmont Hotels & Resorts, she has created and is now implementing a project embracing the idea that a well-executed bar program can match the world's most notable kitchens in fresh full flavors, creativity, consistency, passion, and innovation. The recent boom in restaurants and bars has slowly changed the elements necessary to make and sustain a successful hospitality operation. Where once stood a dining landscape in which location, quality of food, and excellence of service determined the achievement of a concept, there now lies a crowded scene in which these three hallmarks are simply not enough to guarantee success.
Over the past several years, through extensive beverage consulting work, we have seen a direct correlation between adding a sophisticated and correctly marketed bar program and the longevity and even overwhelming success of a restaurant. In many cases, a well-executed cocktail program has been the final factor between a wildly popular restaurant that stands the test of time and one that flattens out and fades.INTERNATIONAL COCKTAIL MENU SAMPLES
